Four weeks of whole plant based lifestyle is behind me, and the changes in my health and well-being are so tremendous, that I can't see myself to ever go back to eating animal products. Song of today: What a difference a day makes...Last week I got my lab work done and everything, from cholesterol to triglycerides went down to a normal healthy range in just 3 weeks, see below picture which is not of good quality as I took it directly from the screen. My glucose was 80 at the lab test and my A1c went from a roaring 14 to a much better 10 while cutting down my insulin 2/3! I do not take any pills. What a difference 3 weeks make. In three month I expect it to be a 6 and being off of all insulin, at least that's my goal. But these are only lab test results and facts on paper. What I feel is more engery, no aches in my joints, healthier hair and glowing skin. I have become one hot looking grandma, people! The hope to be able to reverse my diabetes is just making me so grateful that my higher power has led me to this new lifestyle. I have been given a second chance to take better care of my body and I will.

Two weeks of Cowgirl goes Vegan on a whole plant based lifestyle - nope don't call it diet, it is more. So what has happened so far:
My body is definitely changing. I lost 3 pounds this week which takes me to a total of 5 pounds in two weeks without going hungry away from a meal.
Yesterday, a colleague
asked me if I was on vacation because my face would be glowing. Nope, my
vacation will come up next Friday (imagine how gorgeous I will be after
those 2 weeks LOL).
My waist and tummy look smaller- I lost the weight at the right places instead of going down a bra size as with other diets (Big Kahuna very happy). My hair is not frizzy anymore and just looks healthier.
My glucose readings were never higher than 125 although I already decreased my night insulin by 5 units. I am not taking any pills. Not too shabby for two weeks, isn't it? My diabetes nurse will have a stroke when she sees my new lab tests because I used to be her worst patient with skyrocketing, roller coaster glucose readings. LOL.
I committed to three weeks of eating nothing with a face, no eggs, no dairy, no oils. I will never go back, having too much fun trying new vegan recipes and enjoy more life quality all around by not feeling so exhausted all the time.
My family are still carnivores but have started enjoying my food. Not in a million years would I have thought that I hear my Texan steak and potato husband rave about my lentil meatloaf and black bean burgers on the Barbie. Have a good Friday everyone!

You have to open your eyes in order to see
I have to to write about it because a vegan lifestyle is closely connected to protest against animal cruelty in the public. Coming from a dairy area high up in the Bavarian Alps and now living in the rural South County of Silicon Valley, I have my own thoughts about this subject.
I have lots of friends in California and family in Germany who are trying to do the right thing, producing gmo-free, organic products and raising farm animals free range and humane. We all hate to see the pictures of farm animal cruelty. The hunters, farmers, and ranchers I know, have respect for nature and animals. Most of them are struggling to make ends "meat" because their products are higher priced than the cheap stuff in supermarkets or most of the fast food burgers. These farmers and ranchers do not deserve the violent attacks of radical animal lovers. It is the consumers who need to make the choice to invest more money in their groceries and health or buy the cheap meat and poultry that comes from giant inhumane meat and poultry production plants and gmo modified vegetable factories - I don't even want to call them farms and ranches because they are not.
Not eating animals or animal products does give me a good feeling not being part of farm animal cruelty but not matter if we eat Vegan, vegetarian, or carnivore, we all can help farm animals by supporting new improved laws, and by spending the money necessary to support those farmers and ranchers who do the right thing. The fact that Walmart is now offering a wide variety of organic, gmo-free. free-range product is the proof that something has changed during the last few years. More consumers are asking for this kind of products. Even the fast food joints here in Silicon Valley have changed. We see the Five Guys, The Habit and In and Out becoming more popular because they are promoting grass-fed burgers and a personal connection to the ranchers who deliver the meat. Consumers are willing to pay $6 for a burger instead of chowing down on pink slime under the yellow arches. We are moving into a healthier direction and the farm animals will benefit from it.
